There is an opportunity for a new SHORYU restaurant opening in the heart of Kensington! We are looking for an experienced Head Chef to join the family.
The role:
As the Head Chef you will plan, direct and oversee the kitchen operation of Shoryu Ramen Kitchen. Managing the day-to-day management of Kitchen staff, and service standards, meeting KPI targets, implementing and maintaining procedures for a great kitchen operation. Control daily performance and ensure outstanding food for your menus. Standards of food, kitchen service, health and safety and inventory control will all optimise profits and ensure that guests are amazed by their eating experience.
The Candidate:
- Minimum 3-5 years experience in a similar role
- Knowledge of Japanese food
Key Responsibilities and Accountabilities:
- Maintaining high standards of food quality and hygiene
- Lead, Manage and develop colleagues, scheduling and supervising new team members
- To understand the need for training and development of all colleagues.
- You will support and guide the kitchen team to achieve the highest attainable standards in terms of quality and variety of food
- Being fully conversant with the Restaurant operations and to efficiently manage the operation of all shifts.
- Helping in any area of the restaurant when circumstances dictate
- Food cost controls to be within agreed budgets including stock loss and shrink.
- Manage food waste to prescribed and agreed limits
