Saffron Walden Golf Club is set in the picturesque surroundings of Audley End’s famous mansion, the Club boasts superb views over the historic market town of Saffron Walden.
In addition to our outstanding golf course, we have a 140-person capacity clubhouse and bar & catering facility serving freshly cooked, homemade food on a daily basis, alongside numerous beers & wines. We also have a private function/conference room seating up to 24 people seminar style overlooking the 18th green, in addition to one of the largest private car parks in town.
The Role:
The main purpose of this role is to lead the kitchen to ensure the smooth running and efficient food operation. You will also be required to maintain good systems and data relevant to the role. Being able to develop and supervise a team dedicated to the achievement of excellent customer service and guest hospitality is key. The successful candidate will also assist management in the setting and attainment of financial targets.
You will also be required to supervise all aspects of the kitchen including all staff, equipment and external contractors.
Main Responsibilities:
Kitchen:
- To be jointly responsible with the Bar & Catering Manager for negotiating, jointly with the Bar & Catering Manager all deals with national and local suppliers for foods to be used in the catering process
- To ensure that the best wholesale price for goods is obtained but not to the determent of the food quality
- To use only agreed and nominated suppliers
- To hold a current Basic Food Hygiene certificate as prescribed by current legislation and to review as required. To comply with all legislation covering Food Safety and Health & Safety legislation keeping up-to-date with regulations, amending working practices in accordance with any changes
- To oversee all deliveries of foods ensuring that any shortages are duly noted and accounted for
- To maintain adequate catering stock levels for the purposes required
- To ensure a strict stock rotation system is installed and maintained
- To be responsible for the direction and training of all staff associated with the production and service of foods
- To create menus, in conjunction with the Bar & Catering Manager, that reflects the needs and requirement of members and guests, and to be flexible in provision of the same
- To carry out all Kitchen Risk and COSHH assessments as required by law and to produce all relevant data for inspection when required with the assistance of the Bar & Catering Manager
Staffing:
- To be responsible, together with the Bar & Catering, for the interview, selection, induction training and appraisal of all kitchen staff
- To ensure all staff are instructed daily as to their specific tasks
- To complete rotas for all staff in line with expected business levels, ensuring that appropriate cover is available in the event of absence
- To ensure that the kitchen team performs all of their duties in accordance with the clubs aims and objectives.
- To lead and delegate as appropriate
- To ensure all staff are conversant with product knowledge and working procedures
- To see all kitchen staff are appropriately dressed as required by legislation and the club’s guidelines, and their work wear is both clean and safe
- To meet regularly with staff to appraise current performance and identify individual training and development requirements devising an action to satisfy those requirements if at all practicable
- To ensure that staff conform to current Health and Safety and other relevant legislation
Liaison: You will be expected to liaise with the Bar & Catering Manager, General Office staff, the Committee Chairs and any persons appointed by the Committee.
