Job Title: Chef De Partie

Location: Tavistock, West Devon

Salary: £24,000 – £26,000 annually

Job type: Permanent, Full time.

The Role:

An exciting opportunity to join our talented team at the award-winning Two Bridges Hotel, near Yelverton. Our restaurant, bar and lounges cater for hotel guests and non-residents, and we use the finest local produce to prepare breakfast, lunch and our flagship dinner menu. You’ll need some solid experience, but most of all you’ll need plenty of enthusiasm, a strong interest in food and a desire to learn. The independently owned Two Bridges Hotel is a 32-bedroom country house hotel in the heart of Dartmoor National Park, with a busy food operation catering for both hotel guests and non-residents. The hotel has been awarded Gold for both hospitality and food for four consecutive years by Taste of the West, and has recently been crowned “Best Restaurant” by Food Drink Devon, in additional to holding two AA rosettes and being a finalist in the Trencherman’s Awards 2022. The Bedford Hotel is nearby Tavistock, and Dartmoor Brewery (home of the famous Jail Ale) are also part of this small independent group.

Function of Role:

To assist the Executive Chef in the kitchen operation and ensure the company’s reputation for food quality is maintained at all times.

Key Responsibilities and Duties:

  • To plan, prepare and cook menu items as directed by the Sous / Executive Chef.
  • To assist in the development and planning of menus, including future food trends, and to be passionate about developing new styles of service and concepts in the location.
  • To assist with stock taking when required.
  • To carry out the smooth and efficient running of your section within the department as appropriate.
  • To ensure that customers are given a prompt and efficient service, constantly exceeding customer expectations.
  • To be customer focused at all times, approachable and quick to exceed expectations in fulfilling customer needs.
  • To demonstrate and instruct Commis Chef in food preparation and cooking skills as directed by the Sous / Executive Chef.
  • To compile all food orders for sections under your supervision, ensuring food standards and cost are agreed with the Executive Chef; to ensure stock, deliveries and wastage are all checked and recorded in line with company policies and food standards.
  • To gain an understanding of food costing, sales mix and menu planning.
  • To adhere to the company hygiene and health and safety policies.
  • To rigorously follow the company cleaning schedules.
  • To act as a positive ambassador for the business.
  • To attend to any reasonable request made by the customer or the company.
