Job Title: Senior Chef De Partie

Location: Mayfair, London

Salary: £33,000 per annum. Up to £39,000 if you work more than 48h.

Job type: Full Time – Permanent.

Purpose of Role:

A Senior Chef de Partie is a key member of the brigade who is responsible for the day to day running and management of the section they are working on. The main responsibilities include maintaining the quality of the product and ensuring that the section runs to the standard expected by the Head Chef and Sous Chefs. It is vital to understand and deliver the standards set out by the Head Chef, and to ensure that your colleagues do the same. It is of upmost importance that staff morale is kept high by demonstrating a positive and can-do attitude.

Main Duties:

Duties include but not limited to –

  • To maintain consistent quality and quantity control in all aspects, from portion control to freshness of the product presented.
  • Produce all necessary food for all food service operations as required / instructed by the Sous chef or Head Chef.
  • Ordering of food for his/her section of the kitchen.
  • To ensure that all stocks are kept under optimum conditions.
  • To ensure that all mise-en-place is always freshly prepared and on time.
  • To ensure that all dishes are being prepared to the correct recipe and to the correct quantity.
  • To maintain the quality and quantity control in all aspects, from portion control to freshness of the product presented.
  • To ensure that all dishes reach the pass correctly cooked / prepared garnished / correct portion / size / presented / as required on the prescribed serving dish from the prescribed section in the prescribed manner.
  • To understand and comply with food hygiene regulations.
  • To understand and comply with HACCP regulations and procedures.
  • To make sure that junior cooks and trainees receive the right training and optimum guidance.
  • To deputise in a more senior chef’s absence and to take charge of the kitchen when directed to do so.
  • To attend training courses and seminars as and when required.
  • To follow Health and Safety Policies and Procedures in every aspect and to be COSSH trained.
  • To ensure staff are appropriately dressed and look professional.
  • To ensure and enforce personal hygiene.
  • To be aware of and act in accordance with Fire Safety Procedures at all times.
  • To attend all statutory training as required by the company.
  • To carry out any reasonable requests made by a member of the management team.
  • To assist the Jnr Sous Chefs in monthly stock takes.
  • To mentor, guide and train junior chefs assigned and complete any relevant paperwork required.
  • To have a basic understanding of food costs and GP’s.
